I used a pre-packaged ravioli, but you can use whatever filled pasta creation you like (ravioli or tortellini). For this recipe I also used a pre-made pesto. But you can absolutely make your own. This one is my favorite.
2 cups cooked ravioli or tortellini
1 cup pea pods, steamed
3 cups broccoli, steamed
4 cups fresh baby spinach
1 carrot, grated
1 cup cherry tomatoes, cut in half
1/4 cup green onion, finely chopped
3 tablespoons pesto (can add more if you like)
Cook the filled pasta according to packaged directions. Toss with a tiny bit of olive oil to avoid sticking and set aside.
Steam the broccoli and pea pods for 10 minutes. or until a fork meets minimal resistance when piercing the stem of a broccoli floret.
Toss all ingredients together with the pesto. I only used 3 tablespoons, but if you find your pesto is not coating well add another tablespoon at a time until you're happy. The spinach will wilt slightly with the heat from the freshly steamed broccoli and pea pods.
Serve and enjoy!
