I'm someone who really, really enjoys a sweet potato. Be it fries, be it mashed, be it anything delicious. However, I am a victim of restaurant-love for these oddly shaped root vegetables. If I decide to cook one of these bad-boys, it's usually in a microwave, with a little garlic powder. Yep. Pretty boring.
Knowing this about myself, I decided to venture out into the world of sweet potato burgers. And, if I do say so myself, they turned out surprisingly well! Don't be afraid, these one's aren't too sweet, not dry, they don't fall apart, and you will become addicted!

Ingredients
1 medium onion, chopped
4 cloves garlic, minced
2 sweet potatoes, baked and peeled (Note: I put mine in the microwave until tender when pierced with a knife.)
1 can navy beans, rinsed and drained
2 tablespoons tahini
1 tablespoon agave
1 teaspoon lemon pepper
1 teaspoon garam masala
2 teaspoons cumin
1 teaspoon chili powder
2 teaspoons dried parsley
1/4 cup panko breadcrumbs
2 teaspoons flax seed
Directions
Bake and peel sweet potato and place in a large mixing bowl. Add drained beans to bowl and mash together.
In preparation for baking the burgers, preheat oven to 400.
Saute onion and garlic on medium heat until the onion becomes translucent. Add to bean and potato mixture.
Next, add the rest of the ingredients and stir to combine.
Line a baking sheet with foil and spritz lightly with cooking spray. Form mixture into burger patties and lightly flatten on baking sheet. You should be able to get 8-10 patties, depending on how large your potatoes are.
Bake for 15-20 minutes or until the top starts to brown in spots. Flip and continue baking for another 10-15 minutes, or until the same browning happens on the other side.
Serve and enjoy!
