It rained all weekend. I mean all day, everyday. Being a native Phoenician, I loved it! To celebrate, I made a delicious oven roasted tomato soup. I also stayed inside and completed plenty of home improvement projects. But that's another blog post, entirely (though, there are a few pictures of my handy-work below). The soup turned out perfectly and was just the way to wrap-up the weekend.
Ingredients
3 pounds fresh tomatoes, cored and quartered
4 garlic cloves
1 large yellow onion, quartered
4 cups vegetable stock (low- sodium boxed or make your own)
2 bay leaves
1 teaspoon dried thyme
2 teaspoons dried basil
Drizzle of olive oil
Salt and pepper
Directions
Preheat oven to 450°.

2 teaspoons dried basil
Drizzle of olive oil

Directions
Preheat oven to 450°.
Spread tomatoes, onions and garlic on a foil lined baking sheet. Drizzle with a little (and I mean a very small amount) of olive oil and sprinkle with a little salt and pepper. Place in the oven to roast for 30-40 minutes or until the onions and tomatoes have started to get a little color.
Place the roasted veg and any juices in a stockpot along with the vegetable stock, bay leaves, basil and thyme. Bring to a boil and reduce to a simmer for 20 minutes or until the liquid has started to reduce.
Remove the bay leaves. Use an immersion blender to puree the mixture. Season with salt and pepper, to taste.
Below are the three big projects I completed this past weekend:
I never claimed to be a photographer so don't judge my blurry/dark/shadowy pictures.
