Last night I decided that I was going to take a plain ol' recipe for black bean burgers and spruce it up a little. I came up with this recipe as I was perusing our pantry. It turned out great! I was pretty impressed. I didn't however, stop to take a picture. I hate when that happens. So I borrowed one from TheCrunchyCarrot.com because theirs looks pretty much like mine!
Ingredients
1 can (15 oz) black beans
1 can (15 oz) vegetarian refried beans
2 shallots, chopped
3 garlic cloves, minced
1 green bell pepper
2 medium carrots, peeled and grated
1 tablespoon cumin
1 tablespoon chili powder
2 teaspoons ground mustard
3 teaspoons garam masala
Salt and pepper
1 1/2 cup quick rolled oats
Cooking spray
Directions
Preheat oven to 400°. Saute shallot, bell pepper and garlic together until softened.
Meanwhile, in a large bowl, mix together beans, shredded carrot, spices. Add softened saute mixture and oats. Stir to combine.
Line a baking sheet with foil and spray lightly with cooking spray. Form bean mixture into six even patties. The mixture will be rather sticky, but it bakes up just fine.
Bake for 20 minutes (or until the bottom is golden brown) and flip each patty. Continue to bake for another 20 minutes or until the second side is golden brown.
Serve and enjoy!
