This soup/stew came together rather quickly for me last night...I didn't even have time to take a picture before the whole thing was devoured, so I borrowed one (and gave credit below).
My version is vegan, but this is definitely one you can play with to please the ones you love most!

Ingredients
1 can cannellini beans
1 can butter beans
3 cups vegetable stock
2 garlic cloves minced
1 cup water
3 cups Kale, washed and tough ribs removed
3 cups Spinach, washed
Red pepper flake
Salt
Pepper
Garlic Powder
Directions
In a medium stock pot, spray lightly with cooking spray and add the garlic to heat through. Next add the stock, water, spices and beans. Let the ingredients come to a boil and then you can add the kale and spinach and let cook for another 5 minutes or more to ensure the kale has softened.
Serve and enjoy.
